How do you go about choosing a good theme?

I would suggest you start with a Google search (or any other search engine of your choice). Example:
"Best WordPress theme for [industry]".
The industry could be blogging, real estate, cleaning agency or hospital. This will give you a list to narrow down.
Another way to search is to start in the WordPress theme repository. Go to Appearance >> Themes >> Add New.
You'll see filter options to help you filter down the list of themes. If it's for a blog, you might tick the Sidebar option.
Theme options is another good one to tick for customisation features.
From here, you can either give them a test drive by installing it on your site or play around with the demo on the theme site. Most tend to have some sort of playground. This will help you decide what's best.
As I've been doing this for a while, I know roughly what to look for in a theme. The main thing for me is how customisable the theme is. You don't want to be stuck with one where you can't change simple things like colours to match your brand or fonts etc.
I also look for other things like how they behave on different device screens. In fact, this blog post goes into more detail.
I like Kadence and Astra the most.
